Baking the french toast is a great idea! It takes me forever to make it on my griddle. I love the idea of the egg McMuffins, those are always a hit at our house, I will have to try to make some up to freeze. Thanks for the great ideas!

I do this, too! In fact, I'll pick up croissants or bread from the day-old shelf just for this purpose. (Croissants make killer French Toast, LOL!)
Do you make your toast on top of the stove or in the oven? I find the oven version very easy. I just prepare the bread as usual, then I put it on a cookie sheet coated with non-stick spray. I put this in the oven at 350 degrees, 7 minutes on one side and 3 on the other. This way I can make 8 pieces at a time instead of the four my griddle pan holds.
Did you know you can also make egg-McMuffin kind of sandwiches, too? I make up biscuits (from a can--scratch are not my talent), then I fry some bacon and make some scrambled eggs. I make biscuit sandwiches with the bacon, eggs and a slice of cheese, then I wrap them up individually and freeze them. My younger sons love them (they are 18 and 22) and say it only takes a minute or two in the microwave to cook them up.
I like your idea of freezing the food in individual servings!
